Thai Peanut Noodles

What You Need:

• 8 ounces Linguini
• ¼ cup peanut butter
• ¼ cup soy sauce
• 3 tbsp rice wine vinegar
• 1 tbsp vegetable oil
• ¼ cup chopped peanuts
• 1 green onion chopped
• 1 carrot shredded
• ½ cup frozen peas
• Salt and pepper
• Stockpot
• Paring knife
• Whisk
• Mixing bowl
• Mixing spoon
• Grater
• Strainer

What You Do:

1. Invite your child to fill a stockpot three-fourths of the way full with water and bring to a boil over high heat. She can carefully add the pasta and let boil until cooked through, about 15 minutes.
2. While the pasta is boiling, she can shred the carrot into the mixing bowl as well as dice the green onion with a paring knife. Using kitchen tools helps hone culinary sills, but does require adult supervision!
3. Now she can measure and add the peanut butter, soy sauce, rice wine vinegar, and vegetable oil. She can use a whisk to really whip things up.
4. Once the pasta is finished cooking, she can drain, and then give a quick rinse to cool her noodles down.
5. Now she can toss the noodles with the peanut butter mixture using a big mixing spoon, making sure things are coated well.
6. Invite her to sprinkle the chopped peanuts, frozen peas, and sliced green onion over the top as well as giving things an additional sprinkling of salt and pepper.
