Peanut Butter and Jelly Pancakes

What You Need:

• 1 ½ cups all-purpose flour
• 3 ½ tsp. baking powder
• 1 tsp. salt
• 1 tbsp. sugar
• 1 ¼ c. milk
• 1 egg
• 3 tbsp. butter, melted
• ½ c. smooth peanut butter
• Jelly of your choice

What You Do:

1. In a large bowl, have your child mix the flour, baking powder, salt and sugar with a wooden spoon or clean hands.
2. Add the milk, butter and egg to the mixture, and have her mix it with a large wooden spoon until smooth.
3. Help her measure a level 1/2 cup of smooth peanut butter. Hand her a spoon or spatula and invite her to scrape it out of the measuring cup and plop it in the batter.
4. Using an electric mixer, blend the peanut butter into the batter until it is a smooth consistency.
5. Heat a pan or griddle on the stove to medium-high heat. Dollop a ½ cup of the batter into the pan and wait for it to cook. When you see bubbles, it's time to flip!
6. Flip the pancake over and heat the other side. When both sides are a golden brown and the edges are firm, transfer it to a plate.
7. Have your child grab a butter knife and slather a layer of jelly on top of the finished pancake.
8. Cook the rest of the batter, making a stack of pancakes on the plate with layers of jelly in between.
