Peanut Butter and Jelly Pancakes
Bring the kid's classic PB&J out of the sack lunch and onto the breakfast table with this fun, tasty pancake recipe.
What You Need:
- 1 ½ cups all-purpose flour
- 3 ½ tsp. baking powder
- 1 tsp. salt
- 1 tbsp. sugar
- 1 ¼ c. milk
- 1 egg
- 3 tbsp. butter, melted
- ½ c. smooth peanut butter
- Jelly of your choice
What You Do:
- In a large bowl, have your child mix the flour, baking powder, salt and sugar with a wooden spoon or clean hands.
- Add the milk, butter and egg to the mixture, and have her mix it with a large wooden spoon until smooth.
- Help her measure a level 1/2 cup of smooth peanut butter. Hand her a spoon or spatula and invite her to scrape it out of the measuring cup and plop it in the batter.
- Using an electric mixer, blend the peanut butter into the batter until it is a smooth consistency.
- Heat a pan or griddle on the stove to medium-high heat. Dollop a ½ cup of the batter into the pan and wait for it to cook. When you see bubbles, it's time to flip!
- Flip the pancake over and heat the other side. When both sides are a golden brown and the edges are firm, transfer it to a plate.
- Have your child grab a butter knife and slather a layer of jelly on top of the finished pancake.
- Cook the rest of the batter, making a stack of pancakes on the plate with layers of jelly in between.
